For the kind of use that you are contemplating i would surmise that the Zeniths will be more than adequate. The extra grunt out of the corners with 1720 is what you need combined with the flexibility of the Zeniths up to 4500 rpm, which is going to be around 85 plus mph.
Any other carbs and you open yourself up to a need for re jetting whereas the Zeniths should work well as is.
If I had known I would live this long I would have pushed the envelope a little harder.

For the end result you want I think C spec Zeniths would be a great starting point that wouldn’t take much to perfect, and are sized ideally.

Harlan: You have stated just turn the rockers shafts over to use the top surface (read new). When you examine the rocker shafts on the engines manufactured prior to the 1960 model engines and all the normal and some super (?) engine had round rocker shafts. How do you position these shafts so that the worn side remains down? Zim

Al, you want the worn side to be up. All of the rotational wear on the shaft occurs on the bottom. The rocker is exerting upward pressure due to the push rod and the valve spring.

Al is referring to the iron rocker stands setup which has shafts that can rotate. Flipping the shafts only works on the later cars.

To date I have only dealt with only one A engine and there without looking at the A rockers I just substituted the aluminum rocker stands. I those days local swap meets were awash with 356 engine parts. So why deal with the old stuff? Today I am intrigued with the oil thermostat peculiar to 82388 and its ilk. I'd like to experiment with it. But I'll use the later aluminum rocker stands. Ron Chuck has modified the thermostat so that it works as designed.
