We have been producing block off plate kits for our customers who want the rear pan on the engine to remain flat. The kit comes with two plates (unpainted), block-offs for the lower air channels and hardware 'similar' to what the factory used.

Matt Howard at Deluxe Customs has these block off plates and caps available. I made my own plates but used the caps on my car. They're nicely made and finished and fit well.

The plates are half of the equation. The cups should also be used.
Some days it's just not worth chewing through the restraints.....

When winter sets in, you'll want the hot air that is escaping through the former carb heat outlets to help heat the cabin. Leaving the outlets under the plates uncapped kind of defeats the purpose. I would cap them, even down here in the desert southwest (if I were to remove the carb heat horns).
Some days it's just not worth chewing through the restraints.....
