356 Restoration Shops in the South East

Hello, I'm new to the Registry. I have a partially restored 356 SC that my father bought new in 1964. I had it at a restoration shop in the FL Panhandle and for personal and financial reasons paused the restoration a few years ago. I now have the car back in my possession and would like to find a shop, preferably in the South East to finish the restoration. I'm in S.E. Alabama.
The car is ready to be painted. I imagine though some body prep and surface prep would be necessary before painting. And the engine is rebuilt as well. The car is on "jig" with casters and the parts are in crates. I would like to find a shop so I am open for suggestions. Also I would be open to general guidance of how to approach this, not only how or who to choose from but how to collaborate and what expectations to set. How do I interview a potential shop? What questions ought I ask? I am open to anyone who could offer a process I follow to co-create a successful restoration. Thank you
