I assume you mean "COA" not "COFG"?
"COA" stand for Certificate of Authenticity. I don't know what "COFG" would mean.
It's not unusual for some COAs to have almost no information on them except the chassis number. Some are very complete. It varies.
Your 57 production year / 57 model year 356 certainly could have been special order painted Lago Green Metallic 5605, a color that was a standard 56 year color.
By the way, no need to type in ALL CAPS. On the net, that can be interpreted as "shouting", and some people find that it's harder to read sentences typed that way

Your engine will be a type 616/1 based on its number.
Lago green is a neat color -- was just looking at a '56 coupe in that color this past Wednesday.
