So we have in front of us a used/driver '62-'63 coupe. We want to look for "matching numbers" to see if the chassis/engine/color/interior are what they should be for originality. Where do we look?
I believe the chassis and paint numbers should be on a plate on the door hinge post if I'm not mistaken?
How does one verify whether the engine is original to the car and whether the interior color is original?

The plate on the hinge cover (assuming it hasn't been altered) will show chassis number and paint color for most cars. Other than that, you need to get a Certificate of Originality to determine much else, and they are problematic in their accuracy.

dated March 31, 2008. In it he inlcuded the following:
Original Engine? A useful site is Eleven Parts AG in Switzerland, http://www.elevenparts.com/ which will give you the engine number which was originally sold with your chassis. All you have to do is click on the "Karroserie" badge, fill in the data and they will reply with an email The Registry tech section includes a listing of vehicles which is searchable by engine or chassis number, but Eleven has access to the original Porsche factory Kardex data, which is no longer available in the USA. (Porsche Cars North America, usually referred to on 356 Talk as PCNA, refuses to release the original Kardex, instead claiming privacy issues and selling a "translation" known as the Certificate of Authenticity, expensive but often inaccurate.
I would not waste my money on a COA as they are expensive and most often times inaccurate.
