Curious...is a clutch release bearing a serviceable item...I.e., rebuildable? If so, how much of a challenge?

You could take it apart and clean and lubricate it, but by most people's thinking it is too much labor for how cheap a new one is, in case it didn't work out.

Yes, it can be taken apart--if it has 2-holes to punch it out so it can be cleaned and checked for bearing wear.
However, the real problem is the wear .occurring from the release fork (also worn) on the trunnions--one side more than the other side.
So, I agree that it's cheaper to replace it w/a new one.
I used to repair them during the early days when they weren't readily available--I still have a couple in my archives.

I worked for an old Hungarian guy and he would repair/rebuild just about anything. And he wasn't shy to charge for it.
