How can I find information about the history of my 356 from the Porsche manufacturer?

Robert,

the COA is derived from the factory build sheet called a "Kardex" which I think is more useful than a COA. There are Members here who can help you with getting one.

Just a reminder that the Kardex is not a "build sheet".
It is a card within a card file system used to record and track warranty
claims and payments, if any, for said claims. One can also
obtain paint color, interior material and color and options,
...if one is lucky. Those items were added back in the day
for further information in the event a warranty claim is
submitted for, let's say, a sunroof malfunction,...there better
be one on the car.

The Kardex is the most reliable source for information, but
rather often not complete enough to be used as an ersatz
build sheet.

+1 on the Kardex as a most comprehensive source. There are contacts around who can for a reasonable fee get your Kardex for you.
