Pardon the pun...
I installed a front disc brake kit from one of our trusty vendors. The kit was very easy to install and the car stops better than it ever did with front drums. The issue I have now is that the discs seem to rub constantly. The front rotors are very hot to the touch after driving and with the clutch depressed, the car coasts to a stop on level ground.
I thought that disc brakes are self adjusting? Is there something that I should or can do to stop the rubbing? I have about 500 miles on the car since installing the brake kit.
I don't suspect this will affect the cause or solution but the car is a '61 Roadster.

I'm guessing your M/C kit is for drum brake systems, not discs. Likely your problem.
I once bought a 62 B with 912 motor and C discs. They dragged all the way from Grass Valley to Fairfield. Once I installed a C brake reservoir (more convenient because it mounts inside the trunk and connects to the M/C via hoses) the problem went away. I also ended up rebuilding the calipers and replacing the rotors, pads and hoses since they had been 'cooked' long before I got the car. Maybe why the guy sold it for so lilttle.
Perhaps this will allow you and your car to 'break out'.

Disk brakes do not retract the pads away from the disk but
just float there but they should not drag. Master cylinders
for disk cars have valve in then that dumps any pressure in
the system when the pedal is up, The 356 disk master
cylinder comes with a blue band on it that tells you that
this cylinder has a "Boden Ventil" or in my poor German a
tank vent valve. You should have been supplied with a master
that can do this. Another cause is no free play in the
pedal. when the pedal is up it should have about 1mm or more
of play in it till you can feel it hit the master. If this
is missing the master cannot open its system to the res. and
let the pressure off.
