I hate to go non-original since I've done my best to restore the car to it's original state but, safety does have its advantages.
Where can I find nice 3 point belts for my car, (lap and shoulder)?
My interior is red. Should the belts be red or black?

A set of belts were installed by PEP before I got the car. They are comfortable, unobtrusive, and I can only hope they do what they are intended to do if that is ever required.
I think EASY Jim also offers 3-point belts; Jim does good work. Your choice.

In my last two 356s I have installed 3-point Diest Safety belts
(black) that I bought from Jim at EASY http://www.easypor.com, and I
highly recommend them. They are non-retractable, which I prefer
because they look more period. Modern retractors in a 356 are just
too, well, modern for me.
I see no point in using red belts in a red interior car. You're
unlikely to be able to find red webbing that will match your
interior. Black goes with everything.

Non retractable belts
On the 3pt belts that do not retract, does the third belt use one of the same anchor points as the original 2 or do you have to drill an anchor for the shoulder belt?

The shoulder belt is anchored at the rear of the rear interior panel.
You definitely DO NOT use the outside floor anchor point, that would
be disastrous. There is a great deal of detailed information on this

The thing about non-retractable is you're effectively "bolted" into the seat. If you want to reach for the dash, floor, window crank, etc., you need to slip off the shoulder. I have non-retractable factory installed 3 point in my '67 250 SL. Anytime I try to move to a position other than straight forward, I'm reminded that I'm not going anywhere. The unit doesn't look so bad in the factory mounting point relative to the comfort/safety it provides.

Your car did not come with any attaching points for seat belts. The floor and quarter panel attaching points need to be drilled and reinforced by you. Attaching points for seatbelts (both lap and shoulder) were installed by the factory in 63 and later 356s. You missed it by one year. I was in the same boat. My 62 Cab, now has lap, shoulder, and rear seat belts.

John, it all depends on the driver's height and arm length. I'm
6'2", not at the extreme end of the Bell Curve, but probably taller
than the average 356 driver. Snugly belted into my 3-point
non-retractable setup I can easily reach the passenger window and
rear quarter, as well as the fuel cock. I can just reach the
emergency brake handle to pull it on. I have to slip out of the
shoulder belt to reach the driver's rear quarter. I don't mind the
very minor inconvenience of the non-retractable belt to avoid the
look of the bulky retractor mechanisms. And retractor mechanisms can
conceivably fail in a rollover or extreme situation. I like the
fail-safe simplicity of the non-retractable system. Nothing wrong
with being "bolted" into the seat, in my opinion.
