I know everybody hate's value questions: But
Is Hagerty Valuation a pretty good starting point?
2 cars I'm trying to get values for:
61' B Super Coupe Average or Good on Hagerty's: $60500
64' C Cab, Average or Good on Hagerty's: $78,300 seems low for a Cab.. And a 64' SC Cab is almost double at $149k

In my opinion: The T-5 coupe value seems high. Having an SC engine doesn't double the value.
Hagerty no doubt just averages data points, so it is a slave to them. But it clearly isn't paying enough attention to what they truly represent.

Hagerty cab values seem low. Try to find one for that. This week in Scottsdale should be telling. I attended the Worldwide auction last night. A '63 black super coupe with an older restoration went for 65k before premium. Not a bad car but not great. Price seemed about right.

That's an interesting Question though:: Other then the engine is there any other differences between a C and an SC... besides the SC on the back!!!

Yes; they will insure your car for what you want, within reason. If yours is really nice, a couple of photos will make them happy.

could have been a mistake on the C cab vs the SC cab. I also agree that the t-5 valuation seems high. Of course values vary widely depending on the condition of the car and if restored the quality of the restoration, values could differ by double or triple. An original T-5 coupe preservation could easily be worth over 100 while a running needing total restoration car could be worth less than 20.
C and SC cabs are certainly worth a premium over t-6 B and t-5 B cabs, but because the condition of the body and the quality of the restoration could not possibly see more than 20 grand difference between like restored cars.
I have two similar cabs, but one is a super 90. I would certainly think that the super 90 would be worth 5 grand more because of the rarity of the car compared to a 1600 normal, just to give you an idea.
However in conclusion, what someone will pay determines the value, so price it for what you want for it, and see what the market will bear. My five (two cabs two roadsters and one 65 sc coupe are so valuable (to me!!!) that NO ONE will buy them! (LOL)

You could consider using the recently published Excellence 356 value guide as one of your reference points. I no longer have that issue but maybe someone on Talk could share the data. As mentioned, a couple of pics and a stated value that satisfies your level of risk will get you a policy from Hagerty.

I dunno. I'd expect a significant bump for an SC vs. a C, but 90% is more than I'd have guessed. But, only 34% of 356Cs were SCs. Porsche actually built more 2.7 Carrera RSs in 1973 than 2.4 911Ss and look at the price difference there.
It is pretty clear that Hagerty hasn't got a large data set with huge statistical significance: they don't quote any values for a '65 C (as opposed to an SC).
What really amazes me about Hagerty's values is they estimate $ 7,000 more for a cabriolet with a detachable hardtop. Not counting the ultra-rare detachable hardtops with sunroofs, you can get a lot of detachable hardtops for $ 7,000.

Coupe C vs. SC delta is about 37% based on the Hagerty averages. That feels a little closer. Perhaps there are some strange outliers in the Cabriolet data.
My sense of the market is that SCs are much hotter right now than standard C's. That's based on observation rather than specific data points. The fact that the cars are basically the same seems to be ignored, and the difference in horsepower and rarity (particularly for '65s) seems to be driving the prices quite a bit higher for cars born with that motor.
